This simple tasty Roasted Balsamic Garlic Vegetable side dish is a favorite at our house. Pair it with any grilled meat entree and Lipton onion roasted potatoes for a highly satisfying meal. You will certainly get your veggies in for the day with this side dish. Both vegetarians and non-vegetarians will love this recipe. The balsamic vinegar gives it such delicious and robust flavor!

Pair it up with Marinated Balsamic Mushroom Cap Burger with chia seeds or Easy Garlic Ranch Oven Fries or Rutabaga Potato Salad
Ingredients:
- 1 sliced red pepper
- 1/4 head of a cauliflower chopped up
- 1/4 large onion sliced
- 1 lb asparagus
- 1 small package whole mushrooms
- 2 T olive oil
- 2 T balsamic vinegar
- 1 tsp salt
- 1 clove garlic chopped
- 1/2 tsp black pepper
Cooking Instructions
Place cut up vegetables together in a bowl. Stir.
Mix olive oil, vinegar, salt, garlic, and black pepper in a separate bowl. Stir.
Drizzle liquid mixture over vegetables and stir well to coat.
Spread vegetables into a single layer on a cookie sheet pan. Cook in the oven at 425 degrees for about 14-17 minutes.
