Veggie Bean Alfredo Casserole
This Veggie Bean Alfredo Casserole is stuffed full of veggies and has the added bonus of protein and fiber from garbanzo beans. I love all the veggies in this casserole dish blended with the bean Alfredo sauce. Adding garganzo beans (or plain hummus) to this veggie dish adds protein which is great healthy bonus for all. This is especially a bonus for vegetarians or those seeking an added boost of protein.

Holiday Comfort Food Dish
When the garbanzo beans are pureed, they blend easily with the Alfredo sauce, parmesan cheese, and milk. This hearty and healthy recipe has the taste of a holiday comfort food dish but has the extra benefit of lots of fiber.
The golden fried onions on top of the casserole add a delicious satisfying crunch to the tasty veggies beneath. These are so great on the classic green bean casserole dish many enjoy for holiday meals, they make this dish even better.
I use already prepared Alfredo sauce in a jar because this makes the side dish easier and quicker to prepare. However homemade Alfredo sauce would be a delicious substitution.

The vegetables included in this scrumptious dish include Brussels sprouts, yellow pepper, onion, cauliflower, mushrooms, and artichoke hearts. I love all these veggies! This is a great way to add fiber into a meal and still savor the comfort food taste.
Confession Time: I like Brussels Sprouts. But for those who dislike Brussels sprouts, this is the way to eat them because their flavor blends in beautifully and the flavor of them is completely blended. You won’t taste the Brussles sprouts;) My husband didn’t even realize they were in the recipe.
More vegetables in diet is a healthy diet goal for many and this dish adds a good helping of vegetables to a meal. I love the comfort food taste paired up with the giant wallop of fiber this dish brings. That’s a win-win!
Perfect Holiday Side Dish or Vegetarian Main Dish
I love this side dish at a holiday because as a vegetarian, I can eat it. Vegetarians need comfort food dishes too!
I love pairing it up with a Thanksgiving or Christmas meal, though it is so delicious all year round. It can stand alone as a vegetarian main dish or as a side dish alongside a meat entree. It’s golden top and fall colors make it a perfect dish for the fall.

Veggie Bean Alfredo Casserole
Ingredients
- 2 cups Shaved Brussel Sprouts
- 1/2 cup chopped yellow pepper
- 1/2 cup chopped onion
- 1 cup cauliflower florets cut small
- 1 small carton mushrooms, fresh small carton, sliced, then cut slices in half
- 1 14 oz. can medium artichoke hearts drained and chopped
- 1/4 cup Parmesan cheese grated
- 1 cup garbanzo beans drained and pureed in a food processor or plain classic hummus
- 1 1/4 cups Alfredo sauce I used @Prego Homestyle Alfredo Sauce but any brand could be used.
- 1/2 cup skim milk
- 1/2 teaspoon black pepper
- 1 1/3 cups Fried Onions @French's Fried Onions
Instructions
- Chop up the yellow pepper, onion, cauliflower, mushrooms, and artichoke hearts. Combine 6 vegetables in a large bowl and stir.
- Puree garbanzo beans in a food processor. Or use prepared plain classic hummus.
- Pour the Alfredo sauce in medium size bowl. Add the pureed garbanzo beans (or hummus), milk, and parmesan cheese to the Alfredo sauce and stir.
- Add the black pepper to the sauce and stir.
- Add sauce to the veggies and stir well. Spray a glass 2 quart rectangular pan with cooking spray and pour veggie and sauce mixture into the pan. Spread to make an even layer.
- Cook at 400 degrees for 55 minutes. Sprinkle 1 1/3 cups @French fried onions across the top of the casserole and cook for 10 more minutes or until the onions are golden and the sauce is bubbling.
