Simple Easy Quick 7 Ones Egg Burrito Recipe, a Perfect Meal for 1

I’m a WAHM (work-at-home mom) so I often need a single serve meal for myself during the day when my husband is at work and my kids are at school. In the evening and on the weekends, I make big meals for my family, so it’s nice to have a easy lunch option just for myself.

I love this quick egg burrito recipe because I can make it for breakfast, lunch, or dinner. It works for any meal:)

Often we need quick meals for my boys if one of my boys is heading off to practice early or guitar lessons late. With this quick prep burrito, I can easily make one kid a burrito at one time, and an hour later make one for the next kid who is shoving off to a sports practice.

Not only does this simple recipe fit a varied schedule for the evening, it works for me as the vegetarian individual who sometimes needs a quick single serve meal if the rest of my family is eating meat. This is a go-to meal for me on a regular basis because it is so quick and simple. I don’t want to spend a lot of time on food prep during the day because I’m trying to work while I have the house quiet, so I need something fast. A sandwich doesn’t always cut it, sometimes I want something different that tastes great and is healthy too.

I love the ease of this and how it’s so easy to remember because it is seven ingredients all with the number one.

7 Ingredients of One Each Makes 1 Burrito:

  • 1 egg
  • 1 Tablespoon skim milk
  • 1 eight inch tortilla
  • 1 Tablespoon diced tomato (or tomatoes with diced chilies)
  • 1 Tablespoon shredded cheddar cheese
  • 1 Tablespoon medium salsa
  • 1 Tablespoon sour cream

Cook the egg and milk mixture for one minute in the microwave.

That is all it takes to make this burrito. Add salt and pepper as desired and enjoy.

I hope this recipe helps you out. It has come in very handy for me when I have needed something quick with protein, and I desire something warm.

Simple Easy Quick 7 Ones Egg Burrito

Ingredients
  

  • 1 egg
  • 1 Tablespoon skim milk
  • 1 tortilla 8 inch
  • 1 Tablespoon tomatoes, diced
  • 1 Tablespoon cheddar cheese, shredded
  • 1 Tablespoon salsa, medium
  • 1 Tablespoon sour cream

Instructions
 

  • Spray a microwavable bowl with cooking spray. Crack 1 egg into the bowl. Add 1 Tablespoon of skim milk. Whisk with a fork. Microwave for one minute. Slide egg patty out onto tortilla, cut egg patty in half and place halves in a line, and top with 1 Tablespoon diced tomatoes.
  • Next, top with 1 Tablespoon shredded cheddar cheese and 1 Tablespoon medium salsa. Divide the1 tablespoon sour cream in half and spread one half on one side of the tortilla, and the other half on the other side.
  • Add salt and pepper to our own taste. Fold sides in and enjoy! Serve with fruit or tomatoes with jalapenos on the side.

Notes

Other options to add: already cooked sausage or ham, jalapenos, or onions. Enjoy this easy meal!
