It seems everyone is trying to eat more cauliflower and for good reason. It is a healthy vegetable that is very versatile for use in many different recipes. My recipe for Mexican Roasted Cauliflower for Meatless Tacos is so delicious and tasty. It even looks a bit like meat for people who want meat but are eating vegetarian for health reasons, this meat-like appearance is a plus for the asethetics of enjoying a meal for meat-eaters. This recipe is easy to make.

Cauliflower recipes are going crazy all over the internet. People are putting cauliflower in pizza crust, in casseroles, soups, and more. I actually like cauliflower and I can even eat it raw and plain, but I love dressing it up like in this recipe for tacos.

Mexican Roasted Cauliflower for Meatless Tacos

This Mexican Roasted Cauliflower vegetarian taco meat could be eaten in a crunchy taco shell or in a soft tortilla. Recently I’ve seen tortilla bowls on the market and this is a great new product we enjoy at my house (I found them at Walmart). I personally love tortillas so I eat it in a tortilla when I eat this meal.

Maybe your family eats vegetarian once a week as in the trend for Meatless Monday. If so, this is a great meal option for you.

I create an entire spread of options when I set out a taco bar for my family including:

  • shredded lettuce
  • shredded cheese
  • onions
  • tomatoes
  • jalapeños
  • sour cream
  • tortillas
  • crunchy taco shells
  • tortilla chips
  • black beans

Even my husband who dislikes cauliflower loved this recipe, in fact he didn’t even realize it was cauliflower at first;)

Other Recipe Idea Options for Mexican Roasted Cauliflower

I have other ideas for recipe options for this yummy cauliflower. The Roasted Caulifilower could also be added to a plate of nachos for an added benefit of veggies. I suggest adding it to a salad or pasta. It could easily be mixed into spanish rice or a rice pilaf. Create a tasty vegetarian meal by adding in some black beans, corn, onion, and tomatoes with the rice and cauliflower. Yum!

The roasted cauliflower could also be eaten alone as a side dish if desired, however I love the flavor it if in the tortilla with salsa, shredded cheese, sour cream, and jalapeños.

Make this a hybrid taco meal by adding in a bowl of taco meat to the toppings spread for meat-eaters.

Hybrid Meal

This is a great versatile meal that works for hybrid families like mine.

What do I mean by hybrid?

Hybrid families is a label I made up to describe a family who is composed of both vegetarians and meat-eaters. I strive to create recipes that work for both vegetarians and meat-eaters in one dish. Build your own meals like this one is perfect for a hybrid type meal.

Often I hear people wondering what they can make for vegetarian dinner guests. My recipes give people some options for dinner to make a meal that fits all guests.

Mexican Roasted Cauliflower for Meatless Tacos

This recipe for Mexican Roasted Cauliflower for Meatless Tacos is made with the super healthy vegetable cauliflower. This vegetarian recipe for tacos is perfect for anyone who is vegetarian or who is desiring adding more vegetables into their diet. The roasted cauliflower is delicious in a tortilla or a crunchy taco shell. The tasty cripsed cauliflower is bursting with flavor and could easily be added to salads, soups, casseroles, rice, or even as a stand alone side dish. If a person uses vegan taco seasoning, this could also work as a vegan meal option.

Ingredients
  

  • 1/4 cup taco seasoning I use an @Ortega taco seasoning packet 1.25 oz.
  • 1/3 cup olive oil
  • 1 teaspoon onion powder
  • 1 Tablespoon cayenne pepper sauce I have added more when I want to spice it up!
  • 1 teaspoon seasoned salt
  • 1 cauliflower, whole head cut into small bite-size florets

Instructions
 

  • Mix together the taco seasoning packet, 1/3 c. olive oil, 1 Tbsp. cayenne pepper sauce, 1 tsp. seasoned salt, and 1 tsp. onion powder. Stir well.
  • Cut cauliflower head into bite-size florets.
  • Stir seasoning/oil mixture and pour over cauliflower florets in a large bowl. Stir well to fully coat the cauliflower florets. Spread them across a cookie sheet sprayed with cooking spray (I use PAM).
  • Roast at 350 degrees for about an hour (all ovens cook differently so adjust this time to fit your own oven). Stir cauliflower around halfway through the cooking time. Broil to desired crispness for 5-10 minutes. Serve.
