I love a fresh salad, especially in the summer when I’m on the patio eating a grilled dinner. This Spring Mix Greens Salad Recipe with Balsamic Fresh Mozzarella and Pepitas is so delicious! It combines three types of lettuce from the spring mix greens mixture plus other healthy ingredients like tomatoes and avocado. The salad is super easy to make as is the dressing which is balsamic vinegar and olive oil.

I adore this tasty salad. It adds a healthy and flavorful side dish to any meal, but I just adore eating it outside. There is just something extra special about enjoying the fresh air and the fresh ingredients together; it is highly satisfying. This recipe is great for adding protein to a side dish with the cheese and the pepitas.

The 7 Ingredients for Spring Mix Greens Salad Recipe with Balsamic Fresh Mozzarella and Pepitas

Make this salad with fresh produce. The 7 ingredients for this easy prep salad are as follows:

  • spring mix greens: composed of organic baby lettuce, baby greens, and radicchio
  • pepitas (these are pumpkin seeds, and they are delish)
  • fresh mozzarella pearls (love these little tasty morsels!)
  • ripe avocado
  • fresh ripe tender tomato
  • balsamic vinegar
  • olive oil

The spring mix greens are sold in most stores in the United States as a pre-packaged lettuce mixture. I am not sure if the spring mix greens packages are easily found outside of the United States, but you could make it yourself if it’s not sold that way where you live (or substitute with other types of lettuce or greens).

I like to use a ripe avocado for this so it mixes well with the balsamic vinegar and the olive oil for the dressing, yet leaves some tasty avocado chunks in the salad too.

I’ve recently started purchasing pepitas for recipes and for munching on. Pepitas are shelled pumpkin seeds but they aren’t just for the fall! They are healthy and a great source of protein. I’m really becoming obsessed with them and I love them as a tasty afternoon snack. They are perfect for a vegetarian, such as myself, to get extra protein in the diet.

Salad Preparation Tips

I find it’s best to prepare this salad just prior to serving it. If it sits too long, the lettuce will begin to go limp and clump together. Plan to prepare it near the meal time for the best results. Think fresh is best!

Stir the balsamic vinegar and olive oil together as best you can, it doesn’t mix together really well, but when the salad is tossed, it bathes the salad in both.

Best Times to Serve this Spring Mix Greens Salad

This salad is perfect for when entertaining dinner guests because it’s best to consume the whole salad right away. Serving it to a group is the best time to serve it because it will more likely get fully consumed during the meal with a whole group all working on eating it.

Serve it for your family at the dinner table for healthy vegetables and an extra boost of protein.

The salad is so good, I’d love to use it as a leftover too, but I find that it doesn’t work out. It just doesn’t do well as a leftover because the lettuce goes limp and just clumps together. So, make it and eat it fresh. You will love it!

Ingredients
  

  • 4 cups spring mix greens baby lettuce, baby greens, radicchio
  • 1/3 cup pepitas roasted and salted
  • 1 cup fresh mozzarella pearls
  • 1 avocado
  • 3/4 cup tomato cut up
  • 1 1/2 Tablespoons balsamic vinegar
  • 2 Tablespoons olive oil

Instructions
 

  • Peel and dice avocado. Dice tomato for 3/4 c. Combine with 4 c. spring mix greens, 1/3 c. pepitas, and 1 c. fresh mozzarella pearls (cheese). Toss.
  • Prepare dressing: 1 1/2 T. balsamic vinegar and 2 T. olive oil. Stir. Pour over salad and toss again to coat. Serve immediately. This salad is best when eaten just after prepared.
