When the oven is full, an air fryer is a perfect way to cook a vegetable side dish. This delicata squash recipe is so simple and quick it won’t add much work for your meal prep. It’s so delicious. I love making squash in the season of fall!
I buy delicata squash from our neighbor who is a hobby farmer. He grows vegetables and sells them in a shelter on the side of his house. We love stopping by his place to buy vegetables, tomatoes, corn, and pumpkins and squash in the fall. I love buying local and supporting small businesses like his. When we visited him the other day, the farmer recommended we try his tasty delicata squash. He makes it in the microwave, which gave me the immediate idea to try making this squash in my air fryer. So, I tried it and we were instantly in love with this vegetable.

The 4 Ingredients to Make this Delicata Squash Recipe
The ingredients need to make this cinnamon topped delicate squash recipe include the following ingredients:
- delicata squash, peeled, cut in half and seeds removed
- 1/2 tsp. olive oil to brush over the squash halves
- 1/4 tsp. ground cinnamon sprinkled over the squash halves
- 1 Tbsp. honey mustard to drizzle over the delicata squash halves after they have been cooked
Spray a small ceramic dish with cooking spray (optional, but I like to do this to make cleaning the dish easier). Place the dish with the prepared squash into the basket of the air fryer (I have an XL air fryer) and cook it for 13-16 minutes at 360°. The exact cooking time may vary based on the size of the squash. Cook it until the squash is soft to a fork pierce. Remove the cooked squash from the dish and place them on plates. Drizzle each half with honey mustard, 1/2 Tbsp. per squash half. Serve immediately.
The honey mustard addition is a surprise. I tried it on a whim and it was so totally delish on the squash:) So good!!
What is a delicata squash?
A delicata squash is a small squash that is long and cylindrical. It looks like the picture below. It has a thin skin that is easily removed using a vegetable peeler.

This recipe uses an air fryer to cook the squash. I love using my air fryer to make foods. It’s so quick to heat up and frees up my oven for other cooking tasks. I have the XL size and it works out fabulous for a family of five, however, it works great for meals for one like when making eggs or breaded foods.

Cinnamon Delicata Squash Recipe Made in an Air Fryer
- 1 delicata squash peeled, sliced, seeds removed
- 1/2 teaspoon olive oil
- 1/4 teaspoon cinnamon ground
- 1 Tablespoon honey mustard
- Peel a delicata squash with a vegetable peeler.
- Pour 1/2 tsp. of olive oil into a bowl. Brush both halves with olive oil.
- Spray a ceramic baking dish with cooking spray. Lay each squash half in the dish. Sprinkle each half with 1/8 tsp. ground cinnamon (1/4 tsp. total cinnamon needed).
- Cook in an air fryer for 13-16 minutes at 360 degrees until soft. Drizzle each half with about 1/2 Tbsp. honey mustard prior to serving (1 Tbsp. total honey mustard needed). Serrve immediately.
