I adore queso dip with tortilla chips, but sometimes I just want a more healthy option with fewer carbs. When I desire the taste of queso dip but I want something healthier, I make low carb party trays with veggies to dip in the queso. This way I get to enjoy the yumminess of queso, but with fewer carbs and fewer calories. It’s a win-win. This is a great tray to set out at football parties or any parties.

This is so easy to set up. Any veggies could be substituted for the ones I have listed, however, I really adore this Velvetta Queso Dip® with the kohlrabi best. The crunch is so satisfying and kohlrabi slices work so well to scoop up the dip with and enjoy. This is a healthy option, and an alternative to the usual dip platters, for your next party, or for snacks at home.

7 Veggies for Healthy Party Trays
There are seven vegetables used in this platter, and a few are uncommonly used veggies, which is always fun. Here are the seven vegetables I chose to add to this yummy and healthy party platter:
- broccoli stem
- carrots
- sugar snap pea pods
- cauliflower
- zucchini
- radishes
- kohlrabi
I peeled both the broccoli stems and kohlrabi to prepare them for the veggie platter. Kohlrabi is a rarely used vegetable for party platters, as least as far as I’ve seen. I think it’s perfect for dipping because of its crunchy crispness, and its shape is similar to a chip when sliced. The crunch from the kohlrabi is a great alternative to chips and satisfying with its intense crispness. It also complements the flavor of the queso dip so well.
The queso dip recipe I use is the one on the can of Rotel® tomatoes and chilies that uses Velvetta cheese®. Any type of brand of tomatoes and chilies may be used, I just usually choose Rotel because I love it. This makes a simple delicious dip, perfect for dipping veggies in.
I love all the colors in this platter. The vegetables are so pretty and appetite-inducing together. It’s an attractive party tray to add beauty and healthiness to any party food table.
Party Food
Party food can be delicious, and very unhealthy, but, yeah, oh so yummy. But, this enticing platter combines yumminess with healthiness by providing a loaded party platter of veggies to dip in a yummy queso dip. This gives partygoers the best of both worlds and a compromise that may convince some people to indulge in a yummy dip they might otherwise shun. Parties are great for indulging in naughty food, but sometimes I want to stick to a healthier option and this is a great one to accommodate that commitment.
Veggies and dip are classic party platters, but while I love the usual ranch or dill dip, this combo I rarely have seen, but, honestly, it’s perfect. I really love queso dip and tortilla chips. Like, I LOVE it, but there are times when I’d like to cut out some carbs and this idea is perfect for that. I get the taste of the queso dip, but in a healthier way.

Low Carb Party Trays with Veggies and Queso Dip
Ingredients
- 16 ounces Velvetta cheese cut into chunks
- 10 ounces can of tomatoes and chilies
- 3 broccoli stems peeled and sliced into coins
- 2 carrots peeled and cut into sticks
- 1 cup sugar snap pea pods
- 1 cup cauliflower florets
- 1 zucchini cut into sticks
- 6 radishes sliced
- 3 kohlrabi peeled and sliced
Instructions
- Add 16 ounces of Velvetta cheese, cut into chunks, and one 10 ounce can of tomatoes and chilies to a microwaveable bowl, and microwave for 4 minutes. Stir well until cheese fully melts and chunks are stirred in.
- Peel 3 broccoli stems and cut the stems into circular coins. Peel and cut two carrots into sticks. Cut enough cauliflower florets for a cup. Slice 6 radishes. Peel and slice 3 Kohlrabi. Arrange all vegetables (also sugar snap peas on a platter. Serve.
