This recipe could not be any easier or quicker for prep. And it’s seriously the best way I’ve ever had cauliflower. Ever. If you want something simple that will get even your kids, or your picky cauliflower-hating spouse, to eat cauliflower, this is your dish.

This dish is so easy to prepare, I love making this recipe because it gets us to eat another vegetable at dinner. Being a busy mom, blogger, and author, I need easy options for recipes and this is as easy as it can get.

Ingredients Needed for this Cauliflower Cheese Bake

To make this recipe you literally need two ingredients, the third is optional and not totally necessary, but it’s water so it’s simple. Keep scrolling down to easily print this recipe. Look for the printer icon.

You will need:

  • 1 head cauliflower
  • 1 15 oz. jar salsa con queso dip
  • 1 Tbsp. water, optional

Directions for How to Make Cauliflower Cheese Bake

This is easy. So easy. Ridiculous easy. Simply wash the cut the stem and leaves off the cauliflower head. Wash it. Dry it. Add the optional 1 Tbsp. water to the baking dish. Place the cauliflower head into the baking dish. Pour the salsa con queso dip over the cauliflower head to fully coat it. Cover the baking dish and cook at 400 degrees for 1 hour, spooning cheese over the cauliflower head halfway through to baste. Cut into slices and drizzle with salsa con queso dip from the baking dish and serve.

When to Serve this Cauliflower Cheese Bake dish

This vegetable side dish is great for lunch, dinner, or a party. It would also be delicious at a holiday party for family and/or friends. Even kids will like this vegetable recipe, if they like cheesy queso dip, that is. They don’t have to like cauliflower because this tastes so good. It’s really beyond scrumptious!

It would work great alongside a grilled meat entree or as part of a vegetarian meal. As a vegetarian, I could probably eat the whole head by myself as my main dish. See. I really like it. And I think you will too. It’s a great way to consume the healthy veggie cauliflower.

Cheese Sauce

Salsa con queso makes a delicious and convenient cheese sauce. I love the little bit of spiciness from the salsa in the prepared cheese sauce. Salsa con queso is a favorite dip at my house. So when I used it as a cheese sauce topping, the vegetable side dish was a huge hit. Putting cheese on a veggie is always delicious!

Recipe Variation

Try this recipe variation. Simply add a carton of fresh sliced mushrooms to this dish. It’s good just like that or we even love it over pasta. So very delicious and so very easy.

Cauliflower Cheese Bake Salsa Con Queso

This is a simple vegetable side dish Cauliflower Cheese Salsa Con Queso that will nicely accompany any meat entree meal or vegetarian meal. It only requires two ingredients, with the third being optional. This recipe has a very fast prep which is nice when cooking a complicated meal. This is an easy simple no-brainer addition to any meal to add in more vegetables that the whole family will love.

Ingredients
  

  • 1 head cauliflower
  • 1 15 ounce salsa con queso dip
  • 1 tablespoon water optional

Instructions
 

  • Preheat oven to 400 degrees.
  • Add 1 Tbsp. water to a baking dish.
  • Cut stem and leaves off cauliflower head, leaving it whole.
  • Pour salsa con queso dip evenly over cauliflower head.
  • Cook at 400 degrees for 1 hour, basting by pouring cheese sauce over the cauliflower head once halfway through. Slice, drizzle with cheese sauce from baking dish, serve.

    I’m not good in the kitchen and I can’t cook to save my life. But I think I can do this. lol. Thank you for sharing an easy yet healthy recipe.
