Do you love your air fryer? I sure love mine. I especially love it for making a single serving egg dish. This air fryer egg scramble with spinach recipe is very easy to make with a nice quick prep. I have a family of five, but I work from home so when everyone is gone but me, I need a delicious, easy, hot breakfast or lunch; this recipe achieves that for me. This yummy dish is also low in carbohydrates, a great vegetarian option, and rich with protein. It makes a perfect light meal.

Air Fryer Egg Scramble with Spinach

This simple recipe is great alongside some fruit for a light low-carb meal, or pair it with meat (sausage/ham/bacon) or potatoes to make it a heartier meal. I love this recipe because I can quickly mix it up and pop it in the air fryer and get back to work while it cooks. It’s a one-pan recipe which I also love. Easy peasy to yum!

Ingredients Needed to Make This Air Fryer Egg Scramble

The seven components needed to make this recipe are common, easy to find ingredients. It’s an easy prep too which I love so I don’t spend so much time on cooking just for myself. I’m super busy and I want something that is easy, tasty, and healthy for lunch. I often try to do one to two low-carb or no-carb meals a day. This recipe works great for meeting those criteria.

You will need the following:

  • 1/2 tsp coconut oil
  • 1 egg
  • 1 Tbsp skim milk
  • 2 Tbsp mild salsa
  • 1 tsp. diced onion (up to 1 Tbsp. to taste)
  • 2/3 c. fresh spinach leaves, loosely packed
  • 1/3 c. shredded quesadilla cheese

Directions for Making this Air Fryer Egg

The prep for this egg dish is so very simple. First, spread the coconut oil to grease a 700 ml small glass dish. Add one egg to the bowl and 1 Tbsp. skim milk. Scramble them together. Add 2 Tbsp. mild salsa and stir. Add 1 tsp. diced onion and stir. Add 2/3 c. fresh spinach, loosely packed. Add 1/3 c. shredded quesadilla cheese and stir slightly while keeping most of the cheese on top.

Cook in the air fryer at 320 degrees for about 18 minutes or until the egg is fully cooked. Run a spoon along the edge to loosen it and scoop it out onto a plate. Season with salt and pepper to taste if desired.

That’s it! That is all it takes to make this tasty little egg dish.

Substitutions/Additions

Ideas for additions or substitutions include adding up to 1 tablespoon of onion (I liked it this way as well), adding in some precooked meat such as sausage or ham for the meat-lover in your home, and adding other vegetables such as diced peppers. I have also made this with medium salsa and it was very good, it just depends on how much heat you like of course. Jalapenos would be a good addition as well. Try different cheeses such as cheddar, swiss, American, or pepper jack.

What I Love About this Dish

I love how the spinach leaves that are sticking up out of the egg scramble get crispy. Spinach that becomes embedded in the egg dish becomes cooked and limp so the combination with the egg and cheese is yummy. I also love how it’s a small but protein-packed meal, perfect for a vegetarian like me. Plus, this recipe is great because it provides a good amount of vegetables.

I love that this can be made with one dish and done. Simple is best; good is best, especially when I’m just cooking for myself. This could easily be doubled and tripled and put in a larger bowl. Play with the time, I’m assuming it will take longer. Or, simply repeat it for making multiple servings.

As I said above, I love how this is a low-carb dish. When trying to keep from gaining weight (and lose some LOL), I try to limit my carbs, especially white bread carbs. This meal helps me do that and gives me protein to help me stay full longer.

Air Fryer Egg Scramble with Spinach

This is a simple recipe for an egg scramble for one person. It is cooked in an air fryer. This air fryer egg recipe is made in one pan and is great for breakfast, brunch, lunch, or even dinner. It's a meatless recipe so it's perfect for the vegetarian diet. It also contains protein from the eggs and cheese and fiber and nutrients from the vegetables and tomato. It's a single serving so it's perfect for an individual. Double or triple it for more servings, or just repeat the process tp feed more people.

Ingredients
  

  • 1/2 teaspoon coconut oil to grease pan

  • 2/3 cup spinach leaves, fresh loosely packed
  • 1/3 cup Quesadilla cheese, shredded
  • 1 egg

Instructions
 

  • Spread 1 tsp. coconut oil in a 700 ml glass casserole dish/glass dish.
  • Add one egg and 1 tablespoon skim milk and scramble with a fork.
  • Add 2 tablespoons mild salsa, 1 teaspoon diced onion, 2/3 cup fresh spinach leaves, and 1/3 cup shredded quesadilla cheese. Stir slightly while keeping most of the cheese on top so it will get golden brown.
  • Cook uncovered in an air fryer for 18 minutes at 320 degrees, or until the egg is fully cooked. Scoop the egg scramble out by running the spoon along the edges and spooning the whole thing out. Add salt and pepper to taste.
