I am a busy mom so I love easy recipes. My Easy 5-Minute 2-Ingredient Tomato & Chilis Cheese Dip is super easy and super yummy! This recipe is so simple and quick which is something I need sometimes when I have only a few minutes to prepare an appetizer or snack. We have a busy family life with three boys who are into sports, music, and cub scouts (plus ever-increasing social lives!) so I need easy recipes. My moto is just because it’s simple doesn’t mean it’s not good.

Don’t get me wrong though, I love gourmet food. I love a good complex recipe, but only when I have the time to make it. If I don’t have the time, I want something quick, easy, and good. Sometimes I may have only 5-minutes to make something for a party so I need some recipes in my back pocket to make within minutes. Something that is good and tasty, that is what is important to me. This simple dip is perfect for parties or potlucks, or even a simple snack at home.
I enjoy this dip best with tortilla chips or garlic bagel chips, but it’s also good with pita chips, Wheat Thins™, or Ritz™ crackers. It also goes quite well with pretzels or cucumber slices.
Well, there are only two ingredients! Are you ready?
It’s a block cream cheese and a can of Rotel™. Rotel™ can often be found in the aisle at the grocery store near the canned tomatoes. It is a can of diced tomatoes and green chilis.
The can of Rotel™ needs to be drained first. I simply use my can opener to open the can, then use the lid itself to keep the tomatoes and chilis in the can while letting the liquid slip out. Simply hold the lid on the can leaving a slight opening between the can and the lid and pour out the liquid. No need for a strainer (who wants to wash that, especially when it’s not even necessary–you are too busy for that).
This is a mild dip with just a tiny bit of spiciness from the chilis. However, the dip flavor and spiciness can be varied by the type of Rotel™ used. For a spicier dip, use hot. For a different flavor, use the can of Rotel™ with cilantro.

Super Easy Recipe
This recipe is super easy to make. Simply drain the can of tomatoes and chilis and blend it with the cream cheese with a hand mixer. It can literaly be made in a few minutes. I like to set out the cream cheese on the counter for a little bit so it softens up (or microwave it to soften). This is helpful because when soft it blends with the tomatoes and chilis quickly and more thoroughly. It makes a pretty pink dip.
For more spiciness in the dip, add 1 tsp. jalapeño seasoning.
