Oftentimes I create a recipe and post it here, but my brain keeps working on it with new ideas. This happens to me all the time, it’s like I’ve opened a door and all the yummies rush in.
The way I altered this recipe tonight as follows (is so amazingly good!):
Do as above (butter, tortilla, shredded quesadilla cheese), but instead of adding the salsa over the shredded cheese, add instead a handful of fresh spinach leaves (it doesn’t need to be cooked first). Then, sprinkle with garlic salt, onion powder, and dried basil leaves. It’s just a few sprinkles, not measured;) Proceed as described above and top with another tortilla, butter it and flip it when the bottom tortilla is golden. Cook once flipped until the tortilla once on top, now on the bottom, is golden. Cut and serve. Superb!! Love it and gobbling it up as I type (I’m not kidding;).
