I’m a WAHM (work-at-home mom) so I often need a single serve meal for myself during the day when my husband is at work and my kids are at school. In the evening and on the weekends, I make big meals for my family, so it’s nice to have a easy lunch option just for myself.

This is a go-to meal for me on a regular basis because it is so quick and simple. I don’t want to spend a lot of time on food prep during the day because I’m trying to work while I have the house quiet, so I need something fast. A sandwich doesn’t always cut it, sometimes I want something different that tastes great and is healthy too.

7 Ingredients of One Each Makes 1 Burrito:
- 1 egg
- 1 Tablespoon skim milk
- 1 eight inch tortilla
- 1 Tablespoon diced tomato (or tomatoes with diced chilies)
- 1 Tablespoon shredded cheddar cheese
- 1 Tablespoon medium salsa
- 1 Tablespoon sour cream
Cook the egg and milk mixture for one minute in the microwave.
That is all it takes to make this burrito. Add salt and pepper as desired and enjoy.
