I love this recipe! It’s so delicious! If you are looking for a egg dish to please both vegetarians and meat-eaters, this recipe is for you! I’m excited about this dish because it is juicy and tasty. This Tomato Basil Hybrid Vegetarian and Ham Croissant Crust Quiche is top notch. I love the flavor and the zing it delivers from the tomatoes and banana peppers. The chia seeds add crunch and extra nutritional value to my European inspired croissant quiche.

I love it when a new recipe turns out. Food is art that I get to eat. Playing in the kitchen is sheer joy to me, plus I get to eat my art. Love it!
This recipe came about because I had too many croissants leftover from Christmas time. Normally this never happens in our house, but we had so many breads and pastries that we didn’t get them eaten before they were beginning to harden. Gasp! I couldn’t let that happen, so I made them into a crust for my new quiche recipe. It worked out fabulously!
It’s so yummy! This fits into my hybrid diet category of cooking where the dish works for families composed of vegetarians and meat-eaters like my own.
The Ingredients for Tomato Basil Hybrid Vegetarian & Ham Croissant Crust Quiche
The ingredient list for this quiche was fun to dream up. I love trying new combinations. Sometimes they work out, and other times they need tweaking. This time they worked out perfectly the first time. So, I had to make it again to see if I’d get the same results and I was overjoyed because I did! Love this recipe:)
To make this quiche you will need the following ingredients:
- coconut oil
- croissants broken into pieces
- large grape tomatoes, or roma tomatoes
- sweet banana wax peppers from a jar (this gives the quiche it’s zing!)
- shredded mild cheddar cheese
- skim milk
- heavy whipping cream
- minced garlic
- dried basil leaves
- grated Parmesan cheese
- chia seeds
- ham (optional and over half the dish if making it hybrid, double the ham for an all ham dish, omit it for vegetarian–it’s versatile)
Prep time: about 40 minutes
Cook time: 65 minutes

This is an all-in-one meal. You get your protein, vegetables, fruits, dairy, fats, and carbs all in one dish.
I adore using chia seeds in recipes. Did you know these little seeds contain protein, omega 3, 6, and 9, plus fiber and other minerals? I’ve seen them called a superfood and a powerhouse of nutrition. They are also gluten-free. They are a great ingredient addition for vegetarians. Plus, not only do they add nutrition to this dish, they add a bit of crunch to the top which I love!

Breakfast, Brunch, or for a Delish Leftover
Enjoy this quiche for breakfast, brunch, or as a leftover. As with most quiches and egg bakes, they taste jsut as good fresh as they do leftover. I’ve come to cherish leftovers as a busy mom because I can eat something quickly that is already prepared, healthy, and delicious. Before having kids I actually disliked leftovers, boy was I ignorant! But now, I love them:)
This recipe works great if your family is a hyrbid family with vegetarians and meat-eaters, and it also works great if you are having a vegetarian over for a meal. With this type of hybrid recipe, you can please people with both diets. It’s not hard to do, simply add the ham last for section of the dish you want meat on. In my experience, the meat doesn’t migrate in this dish because it is not overly liquid in its consistency. The ham will not dry out on top because the dish is cooked with a piece of tin foil over it.
