  1. Combine the following in a bowl and stir well to make the filling: 4 oz. softened cream cheese, 1 Tbsp. grated Parmesan cheese, 2 Tbsp. shredded mild cheddar cheese, 1 Tbsp. pine nuts (crushed), 1 tsp. minced garlic, 2 Tbsp. bread crumbs Italian style, 1/4 tsp. onion powder, 1 Tbsp. finely chopped fresh jalapeno, 2 tsp. olive oil.
  2. Wash 16 oz. fresh crimini (Baby Bella) mushrooms and remove stem by twisting them off, scoop out any remaining stems. Preheat oven to 375 degrees.
  3. Fill mushrooms with filling and place them on a cookie sheet that has been sprayed with cooking spray. It’s best of the mushrooms don’t touch each other.
  4. Cook mushrooms at 375 degrees for 30 minutes. Optional: Broil for 3-4 minutes until the tops are golden. Ensure they don’t burn on th bottom. Serve immediately.
