  • 1 teaspoon coconut oil to grease the pan
  • 5 cups croissants, broken up into pieces about 5 medium sized croissants
  • 1/2 cup onion, diced
  • 1 1/2 cup grape tomatoes sliced large grape tomatoes, or even Roma tomato slices work too
  • 1/3 cup banana peppers, chopped sweet banana wax peppers from a jar, chopped
  • 2 cups mild cheddar cheese, shredded
  • 9 eggs
  • 1 cup skim milk
  • 1/3 cup heavy whipping cream
  • 1 teaspoon minced garlic
  • 1 Tablespoon dried basil leaves
  • 1/4 cup parmesan cheese, grated
  • 1/2 teaspoon salt
  • 1 Tablespoon Chia Seeds
  • 1 cup ham pieces for hybrid dish if desiring meat


  • Spread 1 tsp. coconut oil to grease a 9x13 inch glass cooking dish.
  • Break up enough croissants into pieces so that you have 5 cups. Spread them across the bottom of the dish.
  • Sprinkle 1/2 cup diced onions and 1/3 cup chopped sweet banana wax peppers evenly over croissant pieces. Place 1 1/2 cups grape tomato slices evenly across the croissant pieces.
  • Evenly sprinkle 2 cups shredded mild cheddar cheese next.
  • Combine the following ingredients in a separate large bowl: 9 eggs, 1 cup skim milk, 1/3 cup heavy whipping cream, 1 tsp. minced garlic, 1 Tbsp. dried basil leaves, 1/4 cup grated Parmesan cheese, and 1/2 tsp. salt. Blend with a hand mixer or blender for about 1 minute.
  • Pour egg mixture evenly over shredded cheese layer. Sprinkle with 1 Tbsp. chia seeds. Last, add 1 cup ham to half the dish for a hybrid vegetarian and meat dish.
  • Cover dish with tin foil. Cook for 60 minutes covered at 400 degrees. Remove tin foil and cook for about another 5 minutes. Quiche is done when a butter knife is inserted and comes out clean (but it can be moist). Remove and let cool for 10 minutes. The quiche will settle and flatten during this cooling time. Cut and serve.
