Air Fryer Yogurt Quiche Recipe
I love the soft texture of this dish. Plus, the juiciness from the tomatoes makes each bite burst with moistness. The sweet corn adds a touch of sweetness and the cheese, eggs, and the yogurt adds protein and substance to the dish. This a great recipe to add to your regular wheelhouse of recipes for your family or even for yourself. Since this makes a smaller dish, it's great for a single person or couple as well.

- 4 eggs
- 1/2 cup nonfat Greek plain yogurt
- 2 teaspoons red onions
- 1/4 cup sweet corn
- 1/4 tablespoon butter
- 1 cup marble jack shredded cheese
- 1/4 teaspoon dried basil leaves
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- 14.5 ounces can of tomatoes, fire-roasted
Spray a 1 quart ceramic baking dish with olive oil cooking spray.
Beat 4 eggs in a large bowl with a fork.
Add 1/2 cup nonfat Greek plain yogurt. Stir well with a fork.
Add 2 teaspoons finely chopped red onions. Stir.
Add 1/4 cup cooked and buttered sweet corn, butter corn with 1/4 tbsp butter first (butter optional). Stir.
Add 1 cup shredded marble jack cheese and stir.
Add 1/4 tsp dried basil leaves, 1/4 tsp paprika, and 1/4 tsp salt. Stir well with a fork.
Add a can of drained fire-roasted tomates (14.5 ounce can).
Cover dish with lid. Place pan in the tray of air fryer. Cook for 48 to 50 minutes in air fryer at 400 degrees.
Cut and serve warm.
