No Grain Hybrid Vegetarian/Meat Jalapeno Poppers
No Grain Hybrid Vegetarian/Meat Jalapeno Poppers. This is an easy, tasty, spicy recipe that pairs great with a football game. Makes 12 poppers.
- 6 individual jalapeno peppers slice in half and removed seeds
- 1/2 cup shredded cheddar cheese
- 1/2 cup grated parmesan cheese
- 4 ounces cream cheese softened
- 1/4 cup pre-cooked bacon or ham, optional OPTIONAL, good without meat
Set cream cheese out on counter to soften. If you did not set out cream cheese in time to soften you can soften it by microwaving for 15 seconds for easy stirring. Mix the three cheeses together in a bowl with a fork. Press fork down to mix cheeses then stir with the fork. If desired, add meat here or save out a portion of the cheese mixture if making meatless and meat poppers.
Cut stem tops off of jalapeno peppers. Cut peppers in half and scoop out seeds. If you like added spiciness leave some seeds in the pepper.
Spoon cheese mixture into cut peppers. Spray a cookie sheet with cooking spray. TIP: Depending on the size of the peppers you may or may not have some cheese mixture left. Add finely chopped jalapeno peppers to leftover cheese mixture and spread on crackers or bagel crisps. It's delicious!
Cook at 350 degrees for 15-17 minutes, broil on low for 2-3 minutes to turn cheese a golden color. Broiling also makes the cheese a bit crispy and finishes up cooking the peppers. Wash hands well after handling jalapenos.
