Avocado Corn Salad with Tomatoes
This tasty low carb salad is full of healthy vegetables and protein-packed fresh mozzarella cheese. White wine vinegar and minced garlic flavor the salad while a diced jalapeno adds spicy zing. This vegetable slaw makes a delicious side dish. This is an easy prep salad perfect for anytime of year. Add fresh corn on the cob in the summer for extra sweetness for the salad.
- 1 avocado peeled and chopped
- 11 ounces corn canned or fresh
- 2 tbsp white wine vinegar
- 1 tsp garlic minced
- 2 tomatoes medium sized, chopped
- 2/3 cup fresh mozzarella cheese cut up
- 1 jalapeno diced in food processor
Cut up fresh mozzarella, avocado, and tomatoes.
Use a food processor to dice jalapeno pepper (cut and deseed first)
Add corn, avocado, tomatoes, jalapeno, and mozzzarella cheese to a large bowl
Add the white wine vinegar to a small bowl and add minced garlic. Stir.
Pour white wine and garlic mixture over vegetables and cheese. Stir to coat.
Serve immediately or store in the fridge until ready to serve the dish.
