Avocado Corn Salad with Tomatoes

This tasty low carb salad is full of healthy vegetables and protein-packed fresh mozzarella cheese. White wine vinegar and minced garlic flavor the salad while a diced jalapeno adds spicy zing. This vegetable slaw makes a delicious side dish. This is an easy prep salad perfect for anytime of year. Add fresh corn on the cob in the summer for extra sweetness for the salad.

  • 1 avocado peeled and chopped
  • 11 ounces corn canned or fresh
  • 2 tbsp white wine vinegar
  • 1 tsp garlic minced
  • 2 tomatoes medium sized, chopped
  • 2/3 cup fresh mozzarella cheese cut up
  • 1 jalapeno diced in food processor


  • Cut up fresh mozzarella, avocado, and tomatoes.
  • Use a food processor to dice jalapeno pepper (cut and deseed first)
  • Add corn, avocado, tomatoes, jalapeno, and mozzzarella cheese to a large bowl
  • Add the white wine vinegar to a small bowl and add minced garlic. Stir.
  • Pour white wine and garlic mixture over vegetables and cheese. Stir to coat.
  • Serve immediately or store in the fridge until ready to serve the dish.
