Cilantro lime salad dressing is so good, it is one of my favorite dressings. It' so delicious on a salad or as a vegetable dip. I've made my own recipe for Tangy Homemade Cilantro Lime Salad Dressing and it's zingy, tangy, and scruptious! The dressing is a delicious summer time salad dressing. I love cucumber slices dipped in it as well. The more delicious I can make a salad, the more likely I will want to eat it and the more I will crave it. Summer is a great time to consume tons of salads due to the many local farmer's markets and the many fruits and vegetables in season. This dressing is tasty anytime of year, but summertime is my favorite time to have it poured over a salad.
Combine 1/4 cup olive oil, 1 teaspoon minced garlic, 5 Tablespoons half and half, 1 1/2 Tablespoons fresh squeezed lime juice, 1/4 cup apple cider vinegar, 1/4 teaspoon ground red pepper, 1 1/2 Tablespoons chopped fresh cilantro, 1 Tablespoon skim milk, 1/2 cup olive oil mayo, and 3 teaspoons sugar. Mix with a hand mixer for 1 minute until thoroughly mixed. Serve immediately or store in the fridge.
